- Dry couscous
- Red onoin chopped
- Lemon juice
- Tomato paste
- Olive oil
- Fresh parsley and mint
- Hot peppers
- Pour boiling water (or vegetable stock) over the couscous and stir.
- Let it settle down for a few minutes.
- Pour olive oil in a pan, heat until hot.
- Add tomato paste.
- Stir and fry with onions and red (hot) peppers for a few minutes.
- Add couscous to the pan, season with herbs, spices and lemon juice.
